Homemade Roast Beef with Parsnip Puree and Carrots Recipe

This classic and comforting homemade roast beef is ideal for any occasion. The parsnip puree gives the dish a sweet and nutty flavor, while the carrots add a colorful and nutritious side. The roast beef is simply seasoned with salt and pepper to allow the natural flavors to shine through.

  • Total Time: 1 hour, 20 minutes

Instructions

  • Preheat the oven to 375°F.
  • Season the beef liberally with salt and pepper.
  • Add the olive oil to a large skillet over high heat and sear the beef on all sides until browned.
  • Place the beef in a roasting pan and roast for 35-40 minutes, or until a meat thermometer reads 135°F for medium-rare or 145°F for medium.
  • Remove from oven and set aside for 10 minutes before slicing.
  • Meanwhile, combine the parsnips, carrots, and enough water to cover in a large pot.
  • Bring to a boil, then reduce to a medium heat.
  • Cook for approximately 15-20 minutes, or until the vegetables are tender.
  • Return the vegetables to the pot after draining.
  • Combine the heavy cream, butter, garlic powder, onion powder, nutmeg, cayenne pepper, salt, and pepper in a large mixing bowl.
  • The vegetables should be mashed or blended until smooth and creamy.
  • Serve the roast beef sliced with parsnip puree and carrots.
