Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Brown the beef roast on all sides in a Dutch oven over medium-high heat.
- Set aside the beef roast from the Dutch oven.
- Cook until the onion is soft and translucent in the Dutch oven with the onion and garlic.
- Stir in the beef broth, red wine, tomato paste, thyme, rosemary, salt, and black pepper in the Dutch oven.
- Bring the liquid to a simmer and return the beef roast to the Dutch oven.
- Transfer the Dutch oven to the oven, covered.
- Cook for 2 hours.
- Remove the Dutch oven from the oven and stir in the baby potatoes.
- Return the Dutch oven to the oven for another 30 minutes, or until the potatoes are tender.
- Take the Dutch oven out of the oven and add the frozen peas.
- Allow the peas to warm through by stirring them into the liquid.
- Serve the beef roast alongside the potatoes and peas, as well as plenty of the flavorful cooking liquid.
