Sirloin Beef Pot Roast with Potatoes and Peas Recipe

This Sirloin Beef Pot Roast with Potatoes and Peas is a hearty and comforting dish ideal for a casual family dinner or a special occasion. The tender beef roast is cooked in a flavorful broth flavored with red wine and aromatic herbs and served with tender baby potatoes and sweet peas.

  • Prep Time: 20 minutes
  • Cook Time: 2 hours, 30 minutes
  • Total Time: 2 hours, 50 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Brown the beef roast on all sides in a Dutch oven over medium-high heat.
  • Set aside the beef roast from the Dutch oven.
  • Cook until the onion is soft and translucent in the Dutch oven with the onion and garlic.
  • Stir in the beef broth, red wine, tomato paste, thyme, rosemary, salt, and black pepper in the Dutch oven.
  • Bring the liquid to a simmer and return the beef roast to the Dutch oven.
  • Transfer the Dutch oven to the oven, covered.
  • Cook for 2 hours.
  • Remove the Dutch oven from the oven and stir in the baby potatoes.
  • Return the Dutch oven to the oven for another 30 minutes, or until the potatoes are tender.
  • Take the Dutch oven out of the oven and add the frozen peas.
  • Allow the peas to warm through by stirring them into the liquid.
  • Serve the beef roast alongside the potatoes and peas, as well as plenty of the flavorful cooking liquid.
