Surf and Turf with Beef Roast, Scallops and Spinach Recipe

Tender beef roast and juicy scallops are served with fresh spinach cooked in garlic and red wine in this surf and turf recipe.

Ingredients

Time Needed

  • Prep Time: 15 minutes
  • Cook Time: 45 minutes
  • Total Time: 1 hour

Instructions

  • Preheat the oven to 375°F.
  • Place the beef roast in a roasting pan and season with salt and pepper.
  • Roast for 45 minutes, or until done to preference.
  • While the beef is roasting, melt the butter and olive oil in a skillet over medium-high heat.
  • Cook until the garlic is fragrant.
  • Cook the scallops in the skillet for 2-3 minutes on each side, or until golden brown.
  • Set aside the scallops from the skillet.
  • Cook until the spinach is wilted in the skillet.
  • Pour in the red wine and stir to combine.
  • Serve the cooked beef roast with the cooked scallops on a serving platter.
  • Garnish with lemon slices and serve alongside the spinach.
